Friday

I'm quite new to the skills exchange but starting to make good use of it. I had a lovely box of produce from Karina – flowers, spinach, eggs, lettuce, snap peas … all for a gem. I used lots of it before I got the camera out so the photo just shows the lovely flowers! I used the spinach and eggs that evening to make a summer fish pie (see recipe – delicious). (Great too to have a fishmonger so close – he will sort out a selection of fish for a fish pie and chop it up so it's just ready to go in the dish!)
The following day I helped Karina set up the Green Streets stall and spent a lovely hour or two meeting people - until I had to leave to pick up keys for my new house! I'll probably be using lots of gems up to and when I move – so will be looking to earn some back too! Already, Paul, the electrician has replaced a light fitting and plug socket in my new house – turns out he knows the people who lived there so he also took all their post to drop off on his way home! And later today, Simon is coming to see about plumbing in my dishwasher.

I think I'll have a gathering at my new house once we're settled in - and will think about offering a meditation group!

Summer fish pie

I've lost the original recipe so this is a rough guide. I make individual pies but of course you can increase quantities and made in one large dish. So – for one pie:
• Big handful spinach – briefly steamed or wilted by pouring over hot water. Squeeze out liquid and line bottom of dish
• Break an egg onto the spinach
• Place fish on top of spinach and egg
• Top with about a cupful or so of crème fraiche (I add a bit of milk and lemon juice)
• Final layer of crushed cooked new potatoes and drizzle of olive oil
• Cook for about 15 - 20 minutes, about 170ºC I think!
