On Tuesday after school Sarah and David and their family came to a Waffle making afternoon.
Arlo and Blossom made the batter, messured everything out beautifully (shame I forgot to add the melted butter that was standing waiting passionately on the stove!) It did not make a huge difference as all waffles went down really well and we all enjoyed the experience.

I suppose I have just invented the fat free 'Authentic Belgian Waffle'!

This serves 8-10 (4 by 4 inch) waffles

Ingredients
2 cups of plain flour
2 tsp baking powder
1/2 tsp salt
4 large eggs, separated
2 tbsp sugar
1/2 tsp vanilla extract
4 tbsp melted butter!
2 cups milk

some oil and a brush to grease the waffle maker.

Directions
Preheat iron.
In 1 medium bowl sift flour, baking powder and salt
In a second bowl use the wooden spoon to beat together the egg yolks and sugar until the sugar is completely dissolved and the eggs have turned pale yellow. Add the vanilla extract, melted butter and milk to the egs and wisk to combine.
Combine the egg-milk mixture with the flour mixture just until blended. do not overmix.
In a third bowl bead the eg whites until soft peaks, Using a rubber spatula, gently fold in the egg whtes into the waffle batter. Do not overmix! Coat the waffle iron with some oil and pour enough batter in iron to just cover waffle grid, Close as per manufacturer's instructions until golden brown, about 2-3 minutes. Serve immediately (with butter and icing powder) yummm

I was pleased to receive a gem so that I can spend it next week on the Pampering evening organised by Martha.
